Meal prepping for a short offshore passage with limited fresh food
Lauren Landers Sailing tries to meal prep even for passages of just a couple of days. With limited options at the grocery store before this particular passage, she dug through her freezer and made do with what she had. She turned frozen carrot ginger soup into roughly four meals by adding frozen spinach and butter beans. She also planned to make enchiladas but swapped the plan when her corn tortillas went bad, instead making chicken with enchilada sauce, black beans, and carrots. Fresh food was running low, just two carrots, two cucumbers, and a little cabbage, but her freezer was still full of vegetables and meat, and her pantry stores were fully stocked. The main challenge on a passage like this is simply running out of fresh produce, not running out of food altogether.
